NYC to Houston - route planning advice?

Hi.
I have recently put down a deposit on a K1200 R sport. The bike is in Manhattan, and I live near Houston. I realize that they sell motorcycles in Texas, but I got a really good deal on this one. More importantly it gives me excuse to bond with the new bike over a nice long road trip.

I'm hoping to get some route planning advice. I am planning to stop in the DC on day one to visit family, and I have another night of free lodging the next night in Cumberland, VA. The next morning I'm going to get the 600 mile service done in Greensboro NC, followed by a reasonable amount of riding in the afternoon. After that, the route back to the Houston area is undecided.

Any "must ride" routes that could reasonably fit into the remaining two days of the trip? I would like to have some alternatives to the freeway, but obviously time is limited.
